Potato, Leek and Bacon Hash with Pan Roased Asparagus.

This is one of my favorite hash brown recipes to make for breakfast. A great way to have bacon and eggs in the morning!

Here is what you'll need to serve 2.

For the hash:
200-300 grams russet potatoes - Sliced into discs or thin wedges.
About 1 cup sliced leek (White and light green parts only) I used about 2 leeks.
4-6 rashers of streaky bacon, cut into about 1 inch pieces.
Cooking oil for frying
Salt and pepper


For the Pan Roasted Asparagus.
About 200 grams Aparagus, washed and bases trimmed
2 teaspoons butter
2 sprigs of thyme
4 garlic cloves - sliced
Cooking oil for frying
Salt and pepper

2 x Poached egg

Steps for the Hash:
1. Heat a little oil in the large frying pan over medium heat, cook the sliced potatoes till they brown. About
3-4 minutes per side. You might need to do this in 2 or 3 batches. Once cooked, set aside and wipe the pan down. (Alternatively, you can cook the potatoes in the oven.)

2. Heat the pan without oil over a medium flame, then add in the cut bacon. Fry until the fat starts to render
and the bacon begins to crisp up.

3. At this point, add in the sliced leek and fry for about 3-5 minutes, till they soften and just begin to brown.

4. Add in the cooked potatoes and fry for a another 2 minutes or so. Ensure everything is mixed well together. Season with salt and pepper to taste. Dish onto serving plates and set aside. Wipe the frying pan down.

For the asparagus:
1. Heat about 2-3 teaspoons of oil in the frying pan over medium heat. When oil is heated, add in the garlic and fry for about 1 min.

2. Then add in the asparagus. Fry for about 2-3 mins (depending on how thick your asparagus is).

3. Finish off by adding the butter thyme into the pan and frying for about another min or so. Dish onto the serving plate with the potatoes.

Top the hash with poached egg and serve. (works just as well with a sunny side up too!)
